Baked Ravioli w/ Tomato Cream Sauce



Ingredients:

5 cups (one family-sized pkg) fresh cheese ravioli

1 Tbsp. olive oil

1 medium onion, diced

3 cloves garlic, minced

2 tsp dry basil

1 tsp dry oregano

2 Tbsp tomato paste

1 14 oz. can tomato sauce

1 14 oz. can dice tomatoes

1/4 tsp baking soda

1 tsp honey

1/4 cup heavy cream

salt and pepper

1/2 cup grated mozzarella cheese

1/4 cup parmesan cheese

dry or fresh parsley for garnish

Directions:

Boil water and cook ravioli according to package instructions. In a stove top and oven safe skillet, sautée onions in oil for 3-4 minutes until soft and translucent. Add garlic, basil, and oregano and cook 2 minutes more, stirring.  Stir in tomato paste and cook for 3-4 minutes.  Add tomatoes and tomato sauce, baking soda and honey and stir well. Allow sauce to boil lightly then reduce and simmer 5-10 minutes.

Turn on oven broiler. Turn off heat under sauce, stir in cream. Taste for seasoning and add salt and pepper. Gently stir in ravioli and distribute pasta in sauce evenly.  Top with mozzarella cheese, parmesan cheese.  Broil 1-2 minutes or until cheese is melted and golden. Sprinkle on parsley. Serve in skillet.
