Butternut Ravioli with Apples and Sausage

 


Ingredients

1 10 oz pkg butternut squash ravioli

6-8 cooked pork or chicken sausage links (maple sausages are really good here)

2 tsp olive oil

1 tbsp butter

2 apples, cored and sliced 

half a red onion, peeled and sliced

2 tsp fresh thyme leaves, or 1 tsp. dry thyme 

freshly grated or shaved parmesan cheese


Directions

Cook butternut squash ravioli and sausages according to package directions. Melt olive oil and butter together over medium heat in a shallow pan. Add apples and onions and cook, stirring and flipping frequently, until apples and onions begin to soften and brown. Stir in thyme leaves. Drain ravioli well and add to apples and onions, tossing gently to coat. Serve ravioli with parmesan and a sprig of fresh thyme, with warmed sausages alongside.
